Ina Garten Overnight Irish Oatmeal

Ina’s method gently simmers steel-cut oats the night before, then lets them sit covered so they finish cooking perfectly by morning. One batch serves 6–8 and reheats beautifully with milk and your favorite toppings.

  • 1½ cups steel-cut oats
  • 2 teaspoons kosher salt
  • For serving: whole milk, chopped salted nuts, dried cranberries or other dried fruit, maple syrup, brown sugar, or fresh berries

Instructions

  • Bring water to a boil – In a large saucepan, bring 6 cups of water to a full boil over high heat.
  • Add oats and salt – Stir in the steel-cut oats and kosher salt. Reduce to a simmer and cook for 5 minutes, stirring occasionally.
  • Cover and let sit overnight – Remove from heat, cover tightly, and let stand at room temperature overnight (8–12 hours).
  • Reheat in the morning – Stir in a splash of milk or water and warm gently over low heat or in the microwave until hot and creamy.
  • Add toppings – Serve with warm milk, chopped nuts, dried cranberries, and a drizzle of maple syrup or brown sugar.
  • Portion leftovers – Store extras in containers for quick reheating throughout the week.
